Ingredients
Instructions
  1. Keep all the ingredients handy.
  2. Peel off the skin from the apple, Cook the apple in the sauce pan with half cup of water until it becomes soft.
  3. Mash the apple and banana into a paste. Keep the paste aside.
  4. Sieve the wheat, baking powder and baking soda together until they are combined.
  5. Squeeze the orange and keep the juice ready.
  6. Grate the carrot and keep it aside.
  7. Now whisk the buttermilk and sieved palm sugar in a mixer until it is completely dissolved in the buttermilk.
  8. Add the banana apple paste to the buttermilk and whip them together for 10 secs.
  9. Transfer the mixture to a bowl. Add coarsely powdered nuts to it and mix well.
  10. Add grated carrot and orange juice and mix well.
  11. Add ghee and vanilla extract to it and mix well.
  12. Now add the sieved wheat flour slowly and mix well until the batter is smooth without lumps.
  13. Before transferring the mixture into the cake tray, line up the tray with parchment paper.
  14. First trace the bottom of the pan on the parchment paper and cut it.
  15. Cut the paper to cover the sides of the tray too.
  16. Now line up your cake tray with parchment paper.
  17. Transfer the batter to it.
  18. Preheat the oven to 250 degree celsius. I used OTG(Oven Toaster Griller).
  19. Bake this at 220 degree celcius for 30-35 mins until the tooth pick inserted comes out clean.
  20. Transfer the cake to the plate and pull out the parchment paper slowly.
  21. Now the nutritious low fat diet cake is ready to be served.
Recipe Notes

Tips

  • Preheat the oven until both the rods turn red.
  • While baking if you feel that the top layer of the cake darkens, then you can change the heating mode to ‘Heat only the lower rod’
  • I have used OTG (Oven Toaster Griller), if you are using a microwave oven you can adjust the temperature as required.

  • Ghee is Rich in Fat Soluble Vitamins A, D and E.  It raises the good kind cholesterol (HDL) and lowers the bad cholesterol (LDL)

Side effects

There is no direct side effect associated with this simple low fat diet cake. However it is good to make sure, you are not allergic to any of the ingredients used in the making of this Eggless Fruit & Veggie Combo Cake.
