Hope you all enjoyed the No Sugar – Banana Oats Biscuits recipe that I posted last time. Today, I will be sharing the Beetroot Malt / Beetroot Health Mix Powder recipe which can be taken by kids as well as adults. There is no need to mention that beetroot is a delicious vegetable packed with Vitamins and Minerals. But sometimes it’s hard to feed kids with veggies through our usual recipes. Children are quickly bored with the traditional way of cooking and look for varieties or an attractive form to eat anything. It’s under such scenarios this Beetroot recipe will come in handy.


Beetroot Malt / Burfi / Ladoo

Actually, this is an All-in-One recipe. You can make three different delicacies with this recipe.

  • Beetroot Malt – You can make the Beetroot Health Mix Powder and store it. Later, whenever needed, you can mix this Beetroot Powder with Milk and serve.
  • Beetroot Burfi / Beetroot Ladoo – You have to follow the same process as making the Beetroot Health Mix powder. But without drying or powdering, you can make Beetroot Burfi or Beetroot Ladoo and serve instantly.

All these different varieties of beetroot recipes taste amazing and are very nutritious! My 2-year old kiddo love to have Beetroot Powder with Milk.

Even if your child doesn’t like to eat beetroot as a vegetable, you can make this Beetroot Powder, store it and prepare Beetroot Malt twice or thrice a week (as needed) and feed him.

Nutritional Benefits of Beetroot Health Mix Powder

Possible Side Effects

  • Eating beetroot can make the urine or stool look pink or red. This is usually harmless.
  • Betaine in beets can cause nausea, diarrhoea, vomiting or gastrointestinal issues.
  • May temporarily paralyze the vocal cords.
  • Excessive Beetroot intake may cause kidney stone formation.

So ensure to take Beetroot Malt in moderate quantities. Maybe twice or thrice a week based on the requirement. If you or your child have any health conditions then it is good to consult with your doctor before taking Beetroot Malt regularly.

Beetroot Malt / Beetroot Health Mix Powder

Servings: 2 cups of Beetroot Powder

Equipment

  • Iron Kadai

Ingredients

  • 2 & 3/4 cups Chopped Beetroot [ or 2 Beetroots ]
  • 1.5 cups Jaggery
  • 1/4 cup Water [ for grinding – Optional ]

To Dry Roast & Grind

  • 20 Cashews
  • 20 Almonds [ skin peeled ]
  • 5 Green Cardamom [ or Elachi ]

Instructions

  • Peel 2 beetroots & chop them into small pieces. This will be easier for grinding. Keep the other ingredients ready. 
  • Soak Almonds for 1 hour in warm water & peel the skin.
  • Roast all the Almonds & Cashews for a minute and set aside.
  • Grind the Beetroot pieces to a fine paste in a blender. Add water only if needed. Add the beetroot paste to a hot pan & cook until the raw smell goes. Iron Kadai works best for this recipe. You can also make in normal ones.
  • After 15 mins most of the water is evaporated.
  • Now add the Jaggery. You can also make jaggery syrup and filter it for impurities.
  • Let the Jaggery dissolve completely.
  • There will not be any water left out. At this stage, you can make Beetroot Burfi or Beetroot Ladoo. For Beetroot Health Mix powder, cook for more time. It takes about 35 mins from the start to end.
  • Grind the nuts & Green cardamom(remove the skin and add the seeds) together in pulse mode. Make sure you leave frequent intervals otherwise it may turn into nut butter.
  • Add the roasted nuts powder. Keep stirring, until it forms a huge mass. The jaggery will crystalline & change into powder form.
  • Once the mixture turns dry, switch off the flame. Keep mixing under the fan to cool it down. Otherwise, it will be a huge mass once cooled down.
  • In 2 mins, it hardens & resembles the texture of rock salt.
  • Break it with a fork & grind it to a powder with the help of a blender.
  • Add 2 tsp Beetroot Malt to 200 ml Milk. You will see a beautiful colour like Rose Milk. Add preferred sweetener only if needed.
  • No colour or additives or preservatives were added to this recipe. Enjoy this light pink treat. It tastes similar to Badam Milk.

Notes:

  • Use equal amount of Beetroot & Jaggery. I have used less jaggery so that I can sweeten the recipe later based on individual preference.
  • I got appoximately 2 cups of Beetroot Health Mix Powder. 1 cup – 240ml.
  • You can make Beetroot Ladoos or set it to Burfi once the beetroot mixture starts to thicken.
  • Beetroot Powder stays good for 2 months in an air tight container.
  • When you dry under fan, if you have not reached the right consistency, then you won’t get a powder form. It will still be a paste. In that case, cook it again for 2 to 5 mins. Then try mixing it again under fan.
